For Christmas one of the things I love to give to friends and family are home-made goods, like cookies or condiments. Everyone appreciates food that has been lovingly prepared and I usually pack everything together in a hamper filled with tea and spices from my favorite shop.

This year I have decided to make a Raspberry-Chia Jam and thought I’d share the recipe with you in case you were looking for a last-minute gift . This is a delicious and healthy alternative to regular store-bought jams and can be easily prepared in 20 minutes. I made another batch last night and was amazed at home quickly the jam is prepared.

Due to the fact that fresh raspberries are not really available at this time of year, I used frozen raspberries instead. And whilst I was initially apprehensive about the end result, I have to say it worked just as well as if you were using fresh berries.

The jam tastes great with freshly baked bread, but my favorite way to eat it is on top of piping-hot porridge.

Raspberry-Chia Jam

makes 4 small (130ml) jars

  • a splash of water
  • 600g frozen raspberries
  • 2.5 tbsp honey
  • 3 tbsp chia seeds

Add a splash of water and the frozen raspberries into a medium-sized saucepan and turn the heat on high. Stir occasionally until the raspberries have softened. Once the raspberry have softened stir well to ensure that the smoothens and you won’t need a blender to puree. Once the mixture is smooth, stir in the honey. Add the chia seeds and leave the jams to simmer on medium-heat for approximately 10-15 minutes, whilst stirring occasionally. Then transfer the jam into clean and sterilized jars and refrigerate.
