I love those days when I wake up to a jam-packed 24 hours. Being a person who dislikes boredom, weekends and holidays can quickly become a bit too monotone for me. I like to be occupied; spending my time actively outdoors is always good. Even better, knowing that my whole weekend will fly by because it’s all planned already. I know, this doesn’t necessarily leave a lot of room for spontaneity but I just happen to be a planner. So, it’s really no wonder that I’m super excited to have my friend {who was my flat mate in Munich} visit me this weekend.

I made some muffins so we’d have something to nibble on whilst chatting away and catching up.

As you can imagine I bake and cook a lot for the blog. I eat every single thing you see on here, but of course I’m not going to sit at home stuffing my face with a whole cake or a dozen cupcakes. I love baking for others. It’s so nice to bring a s big smile on other people’s faces with your baked goods. And that was actually one of the best things about my internship in Munich. I consistently had at least 10 people who would gladly eat whatever I put in front of their face.

I kind of miss those days when a whole cake would be eaten in a matter of minutes. Now that I’m at home it takes us a few days to get through 12 muffins. So it sort of makes sense that I’m glad that there’s one more mouth to stuff this weekend. Lots of cooking will happen for sure!

But for now let’s talk about these muffins. Really, they’re nothing special. I just wanted to incorporate a good amount of berries in a cute little cake. My mom’s garden is full of ripe and juicy blackberries and we were given a huge box of organic, plump blueberries so berry muffins was clearly on top of my to-bake list.


In an attempt to “healthify” them a bit I used a good amount of spelt flour which we actually use quite frequently when we’re baking. Throw in whichever berries you currently have on hand. Frozen will work too, you know, for the winter months when you get a hankering for summer fruits!

Spelt & Berry Muffins with Cinnamon Glaze

makes 15 muffins


For the muffins:

  • 115g butter, at room temperature
  • 85g granulated sugar
  • 85g brown sugar
  • zest from 1 organic lemon
  • 2 eggs
  • 1 tsp. vanilla extract
  • 145g all-purpose flour
  • 215g spelt flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 250ml buttermilk
  • 200g mixed berries

For the cinnamon glaze:

  • 150g powdered sugar, sifted
  • a pinch of cinnamon
  • 4-5 tbsp. water


  1. Preheat the oven to 215°C and line 15 muffin tins.
  2. In your kitchen mixer beat the butter, sugars and lemon zest until smooth. Then add one egg after the other and the vanilla extract. Beat at medium-high speed until well combined.
  3. In a separate bowl, combine the flours, baking soda and baking powder.
  4. Add half of the flour to the egg mixture, alternating with half the buttermilk. Beat on medium speed while doing so. After the flour and buttermilk has been added completely, turn up the speed on high and beat for ~4 minutes until the butter is smooth.
  5. Then, using a spatula, carefully fold in the berries. Evenly distribute the batter amongst the liners and bake for 15-20 minutes, or until a skewer comes out clean. While the muffins cool, prepare the glaze.
  6. Combine the sifted powdered sugar and cinnamon in a small bowl and then add the water tablespoon by tablespoon. Stir after each addition. Continue adding 1 tablespoon of water to the sugar until you have the preferred consistency. Drizzle a few spoons of glaze onto each muffin.
