Life Lately. And a Salad.

It’s been a while since I wrote a post {I still miss Munich btw}. I honestly don’t know what happened. I would have had plenty of time in July which I could have dedicated to cooking, photography and writing posts. But somehow I needed a few weeks of just doing whatever I felt like doing. It was fabulous.

Now, the story is a bit different. I’m currently in London. I taking part in a summer school course at a University here because I would have had a veeeery long summer otherwise. It was a wise decision that I do something other than sitting around by the lake all summer. This past year, even though I only realize this now, I sort of missed going to Uni. I missed having exams or  having deadlines. So it’s good to get back into the swing of things.

Apart from going to University, I’ve also taken the opportunity of just hanging out in London and walking around as much as possible. As I approach my fourth year of University in the UK, I certainly don’t feel like a tourist anymore and I now confidently strut my stuff walking along the Strand or up Regent Street. Nothing makes me more proud than being asked for directions. I take it as a compliment that I look like a true Londoner.

One thing I haven’t had a lot of time for is cooking. I’ve been eating out for lunch most days. We usually walk over to Covent Garden and grab something along the way. And when it comes to dinner, I’ve been spoiled by Christina and Fraser. The one time I’ve offered to cook, Fraser spent the rest of the night recovering from a queasy stomach in bed. I take that as a point that I should refrain from cooking and let the others cook for me.

Other than that all I can offer you is some inspiration for a super healthy salad.

Detox Salad-2

When I make salads I usually throw them together in a flash. Mostly it’s because I’m pressed for time, but it’s also because I have  a couple of components that  always make an appearance. For me a salad is composed as follows:

  • base: selection of lettuce, greens like spinach or kale, etc.
  • chopped vegetables: cucumber, tomatoes, carrot shavings, etc.
  • citrus fruit: I like oranges in my salad but grapefruit is delicious as well {berries are a great substitution during the summer}
  • healthy fat: avocado (!!!) or a few tsp. of seeds
  • protein: grilled chicken, turkey breast, smoked salmon, shrimps, etc.
  • cheese: an essential part – cubed feta, grated cheddar or parmesan shavings

Throw it all together and dress it with your favorite vinaigrette. I love balsamic and olive oil with a bit of Dijon mixed in.

    Ahhh so glad to see your new post! I was wondering where you were. I realised I hadn’t commented in a while and was going to ask where you were. I hear the weather in London is lovely at the moment! How long are you going to be in London for? When I graduate from uni (in like 10 weeks), I am considering moving to London for a bit (when I say considering, I mean, if finances work out, I will be there). At the moment I’m pretty much going crazy researching accommodation and jobs haha. I’m seriously hoping to be there by next January so you’ll have to let me know where I should go and what to do x

      Hi Bec. It’s so good to hear from you. I know, I have been slacking on writing and reading blogs and commenting too. My summer’s just been so busy. I hope I can get back to a regular blogging (and blog reading) schedule when I’m back at Uni.
      Yes, London is great 🙂 The weather’s really nice most of the time, and not so scorching hot as it is on the continent. I fly back home on Friday but I’ll be back end of September for Uni.
      It would be so cool if you’d really move here. We would have to meet up. I’d love to get to know you in person!! If you need help researching feel free to ask me anything. I’m not a true Londoner but I might be able to help. xx
