Spinach Salad with a Balsamic-Dijon Vinaigrette

Salads.

Are they not just one of the best things on the planet? After long winters {and although it’s already June it feels like we were still knee-deep in snow last month} it’s so good to swap hearty vegetable stews for plates full of light greens and garden vegetables.

The leafy greens are easily combined with vegetables and even fruit. You can basically add just about any ingredient to a big bowl of greens, drench it in dressing and call it dinner. I have yet to try the famous massaged kale salad but kale is unfortunately one of the those greens which is hardly available in Germany. I like to fill up my vitamin tanks with organic baby spinach and do my best to create fun salads {and sometimes smoothies} with it.

My favorite combination so far has been a big handful of baby spinach, ripe cocktail tomatoes and avocado chunks marinated with a Dijon-balsamic vinaigrette.

For some extra crunch I added pine nuts and some lightly salted pistachios. It literally comes together in less than 5 minutes but it’s a salad that is satisfying, healthy and really, really, really super delicious.

Spinach Salad with a Balsamic-Dijon Vinaigrette

serves 1

Ingredients:

  • 2-3 handful baby spinach, washed
  • 1/3 avocado, cut into medium-sized chunks
  • 1 handful cherry tomatoes, whole or cut in half
  • 2 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. Dijon mustard
  • 2-3 tbsp. water
  • a few pine nuts {they taste amazing when roasted}
  • a few salted pistachios

Instructions:

Arrange the baby spinach, tomatoes and avocado on a large plate. In a small bowl whisk together the olive oil, balsamic vinegar, Dijon mustard and water. Dress the salad with the vinaigrette. Top with some pine nuts and pistachios.
