Almond Cranberry Granola

Some days are simply more exciting than others. Some weeks are actually more exciting than others. I’m sure you know that feeling when you have exciting plans lined up and you can’t stop staring at the clock wishing for the hours and days to go by faster….yet in those situations it seems as if time stood still.

This week is one of the exciting ones. I know that with my internship almost being over I shouldn’t be wishing for days to go by fast but certain occasions require certain measures.

One reason why I couldn’t wait for this week to finally start is because the weather has been dreadful all weekend. And it’s been a long, 4 day weekend here in Germany. Usually I wouldn’t complain about a couple of days off but with the non-stop rain showers and almost freezing temperatures the thought of warmth and sunshine bring a big, happy smile to my face.

The real reason however, why this week is special is because my sister is coming to town tomorrow. She’s only here for one night but that’s still better than nothing, right?!

Anyways, in pre-celebratory mode I made a big batch of granola yesterday because really, there’s no better way to catch up than over breakfast. I know, I’ve posted several granola recipes on the blog before but I somehow manage to always come up with a new flavor combination.

This particular combination was only created as yet another attempt to clean out my pantry and I was quite successful. I used an open bag of almonds, a bag of dried cranberries, oats, buckwheat and honey.

Now there’s only a billion other things lying around in my room that need to be eaten. I’m sure my sister will be more than happy to assist me…

Almond Cranberry Granola


Almond-Cranberry Granola

makes 1 large jar


  • 300g oats
  • 160g almonds, chopped
  • 170g buckwheat
  • 2 tbsp. cinnamon
  • 40g sunflower seeds
  • 175g dried cranberries
  • 60g coconut oil
  • 50g honey
  • 2 tbsp. vanilla extract


  1. Preheat the oven to 180°C and line a baking sheet with parchment paper.
  2. Combine the oats, almonds, buckwheat, cinnamon, and sunflower seeds in a large bowl. Set aside.
  3. In a small pot on medium heat combine the coconut oil, honey and vanilla extract. Wait for the coconut oil to dissolve completely. Add the mixture to the bowl with the oats and combine so that the dry ingredients are covered with liquid.
  4. Transfer the oats to the prepared baking sheet. Spread out evenly using a spatula. Bake for approx. 3o minutes. Stir the granola 1-2 times while baking to ensure even baking.
  5. After 30 minutes take the granola out of the oven and let it cool completely. Then add the dried cranberries. Store in an air-tight container or glass jar.
  6. Serve with milk, yoghurt or dress the granola up as fancy parfaits with fruit.

    This sounds like a really great combination. I always had cranberries to my granola and I love the combination here with almonds. Have a lovely time with your sister!
