Not-So-Naughty Berry Ice Cream

April 15, 2013

So, shooting ice cream is one of the most difficult things ever. It practically melts away right in front of your face until all you have left is a milkshake. Or in my case a smoothie!

Berry Ice Cream

This “ice cream” has been my post-workout snack the last couple of weeks and I look forward to it after each and every Sunday run. I drag myself up the stairs, a sweaty mess, and long for something indulgent and cold. For quite some time I actually made a simple protein smoothie after runs but those quickly got boring and I needed some new flavors in my life. That’s when I started indulging in ice cream…

The ingredients are things that you would use to create a smoothie but in this case I‘m using frozen fruit and  a lot less liquid which happens to make the most heavenly treat. If I’m having this as a post-workout pick-me-up I add about 1/2 scoop of vanilla brown rice protein powder but for vanilla taste you could also just add a drop of a vanilla extract.

I believe this goes without saying, but the ice cream is best served with a sprinkle of granola. It just rounds things off perfectly, as granola always does!

Not-So-Naughty Berry Ice Cream

makes 1 serving

  • 110g frozen mixed berries
  • 60ml juice {I like orange or pomegranate juice most}
  • 1ooml milk {choose any kind you like}
  • 1 tbsp. honey
  • 1 tbsp. chia seeds
  • optional: 1/2 scoop vanilla protein powder {I used Perfect Fit Protein which is a brown rice protein}
  • to serve: granola

  1. Add all the ingredients into a vitamix or blender and blend until the ice cream is formed. You may have to stir through it once to prevent any clogging.
  2. Transfer into a bowl/glass and serve with granola.

    Ahh! Yes ice-cream is a difficult thing to shoot. A tip: I usually make scoops and freeze them again in a muffin form lined with baking paper. Once I am ready to shoot I have the ready made scoops to go! Love the color of this ice cream!

      Thank you Meeta, that is a really good idea. I’ll have to try that next time. There’s more recipes where this one came from 😉

    This is a great post-workout snack! I always fancy something really cold – more cold than I can get from a drink – and this is a much better option than a proper ice cream 😉

      I actually really, really, really like working out if I know I’m coming home to this. It makes long runs so much more bearable!!

    Beautiful! If it were a little warmer, I’d definitely make myself one of these asap. They’re on the list for summer, that’s for sure 🙂

    This looks amazing. I’ve never tried making ice cream (kind of scares me) but this does look delicious. It’s still warm enough to eat it here so I’ll have to give it a go!
