I only realized when Easter was over that I hadn’t partaken in any festive recipe sharing. Whilst everyone was busy creating super fancy recipes that included chocolate eggs and carrots I was busy doing my own thing. However, there’s a couple of celebrations coming up these next few weeks, most notably my sister’s birthday, and I wanted to come prepared.

This is the kind of breakfast I would love to have served to my bed on my birthday {hint, hint}. Just imagine being woken up by the smell of freshly brewed coffee and a huge stack of pancakes. A dream come true! But this doesn’t necessarily have to be served on birthdays only. Mother’s Day is only a month away {mark your calendars!!} and I’m sure your mom wouldn’t mind having this waiting at the breakfast table!

Pancake ingredients

The ingredients you’ll need are probably all in your fridge and pantry already. Feel free to substitute spelt flour with all-purpose flour or any other kind you like. I just felt better incorporating at least one healthy ingredient. And for the cookies you can use any kind of butter or even chocolate chip cookies if you want to go all out. I just had a ton of Belvita breakfast biscuits on hand, so I threw those in.

This breakfast is like cake, only that it’s served in form of pancakes. The spelt-flour pancakes have a crunchy cookie crumb core and are layered in between coatings of thick raspberry-dark chocolate ganache making every single bite a delight!Crown the top with an extra serving of fresh raspberries an a light dusting of sugar.

Cookie Crumb Spelt Pancakes with a Luscious Raspberry-Chocolate Ganache

serves 2 {makes 6-7 pancakes}



  • 145g spelt flour
  • 1 egg
  • 240ml milk
  • optional: 1 tsp. baking powder
  • 2-3 cookies, crumbled {I used belvita breakfast cookies}
  • 30g butter


  • 60g raspberries {frozen or fresh will work}
  • 75g dark chocolate, roughly chopped
  • 80ml heavy cream
  • optional: a splash of milk

Decoration {optional}:

  • Fresh raspberries
  • Pistachios, chopped
  • Powdered sugar



  1. Thaw raspberries in microwave if using frozen ones. Using a blender {or a spoon also works} blend until pureed.
  2. In a small saucepan heat up the heavy cream until just simmering. Remove from heat and add the roughly chopped chocolate. Let the chocolate melt in the hot cream for 5-6 minutes. Do not stir!!! After ~5 minutes stir the ganache until fully combined. Then stir in the raspberry puree. If you desire a more liquid ganache stir in a splash of milk. Set aside.


  1. Measure out the flour into a big mixing bowl. Add the baking powder {if using}, egg and milk and mix using a hand mixer.
  2. In a skillet or on a griddle heat up about 1 tsp. of butter. Once melted drop about 1/4 cup of pancake batter into the skillet. Top with the roughly crumbled cookies. Wait for the sides of the pancakes to bubble, then carefully flip. Repeat with the rest of the batter.
  3. To assemble the pancakes, layer 2-3 pancakes with ~1-2 tbsp. of ganache in between each pancake. Add more ganache on top and garnish with fresh raspberries and a dusting of powdered sugar.
