Let’s Make Granola….

Crunchy breakfast cereals and muesli clusters are one of my weaknesses. I can hardly resist the temptation of buying a new, shiny box of cereals when I walk through the grocery store aisles. I’m so intrigued by many of the flavors that I try the cereal, eat about 1/3 of the box and move on to buying a new flavor. It’s a problem!

Mostly the kinds of muesli aren’t even that fancy but I like to have tried them all. Unlike my little brother who has been eating the same kind of cereal almost every single morning for the last 5 years, I mix things up. Therefore it’s no wonder that making my own granola is something I am beyond passionate about. It really is the best thing to make when you desperately need to empty your pantry and for the active working time you put in the result is pretty fantastic.

When making granola yourself there’s a couple of building blocks that you should keep in mind. First and foremost is the flavor. When I make granola I always prepare the liquid part first, which also contains most of the flavor. I figured out a ratio of fat & liquid that worked for me  and I can adapt that recipe to create new flavors. What works best for me is coconut oil, honey and apple juice. But you can certainly also use butter, maple syrup and any other liquid. If you like your granola to be sweet then add in a bit of brown sugar. Heat up all the ingredients in a saucepan to dissolve them.

Next, think about the main ingredients. It’s best to raid your pantry and check what needs to be eaten soon. I usually gather my ingredients and a large glass bowl and combine oats, seeds  {pumpkin, sunflower, chia, poppy, sesame, flax, etc.} and nuts {walnuts, almonds, pistachios, cashews, …}. Once you have those things in the bowl you can think about optional add-ins. For the recipe below for instance I included buckwheat. Things like dried fruit, desiccated coconut or chocolate are best added once the granola has baked.

Once all the ingredients are combined pour in the liquid and ensure that everything is covered. Bake in the preheated oven for roughly 35-40 minutes, stirring occasionally and rotating the baking sheet about half-way through. I like to have granola as a snack with yoghurt and fruit but it’s also really good as a snack and it can easily be packed in a small bag to throw into your purse. And when worse comes to worse it can also be a tasty dinner…{not that I’m speaking from personal experience!}

A Simple Pantry Staple Granola

Ingredients:

For the liquid mixture:

  • 2 tbsp. coconut oil
  • 125ml apple juice
  • 1/8 cup honey {optionally you can use 1/4 cup honey if you want the granola to be sweeter}
  • optionally: 2-3 tbsp. brown sugar

Dry ingredients:

  • 350g old fashioned oats
  • 30g walnuts, roughly chopped
  • 15g poppy seeds
  • 15g chia seeds
  • 125g buckwheat
  • 35g pumpkin seeds
  • 35g sunflower seeds
  • 40g pistachios
  • 2-3 tbsp. cinnamon

Add-ins at the end:

  • 1-2 handful dried fruit {raisins & cherries}
  • 4 tbsp. desiccated coconut

Instructions:

  1. Preheat the oven to 200Β°C and line a baking sheet with parchment paper.
  2. In a small saucepan on medium heat mix together the ingredients of the liquid mixture and wait until everything has combined. If you are adding brown sugar ensure that it has dissolved. Set aside.
  3. In a large bowl mix together the dry ingredients. Pour in the liquid mixture and stir to combine.
  4. Transfer the mixture onto the lined baking sheet and spread out evenly. Bake for 35-40 minutes, stirring occasionally and rotating the baking sheet half-way through for even baking.
  5. Let the granola completely.  Then throw in the add-ins. Store in an airtight container.

Great post Antonia! I love how you explained it – first time it has actually made sense to me and makes me want to try making granola again. I’ve made it a few times successfully but most of the time it’s just wasting ingredients!

This looks delicious,. I love the pistachio and raspberries. I always make my own granola too and eat it almost everyday.
