Pici with a Creamy Cauliflower-Salmon Sauce

I had no intention of posting this but last night’s dinner ended up being so satisfyingly perfect that I  just had to share.

Last night after work while leisurely strolling home I went through the ingredients I had on hand in the fridge & in the pantry trying to build a perfect dinner in my mind.

Earlier this week I read Lindsay’s post where she shared the recipe for her creamy cauliflower sauce. Naturally, I was intrigued. So, I got home and immediately started gathering all my ingredients in the kitchen. I sautéed the garlic, cooked the cauliflower and blended it all up with some milk and seasoned it. What I had “created” {I use this term lightly since it wasn’t actually my creation} was a creamy, flavorful sauce which unexpectedly did not at all taste like cauliflower. I was hoping to find a piece of parmesan in the fridge to create a rich cheese sauce but after not having been grocery shopping for the last 10 days there was little hope of finding anything in there. What I did find was an unopened packet of smoked salmon which was immediately put to good use.

Seeing as the sauce really did not have the usual cauliflower taste that so many detest I roughly chopped the salmon and added it to the sauce….perfection.

Overall, it took me less than 20 minutes from start to finish to cook this meal, mainly because the pasta needed 15 minutes to be al dente. In an attempt to capture this simple yet delicious weeknight meal I rushed to my room, set up my camera {neglecting everything I learned about good food photography and styling last weekend} and was positively surprised that I could actually take pictures in natural light at 6.20pm…..it looks like Spring is finally here!

Pici with a Creamy Cauliflower-Salmon Sauce

serves 2

Slightly adapted from Pinch Of Yum’s Cream Cauliflower Sauce


  • a knob of butter {1-2 tbsp}
  • 4 garlic cloves, roughly chopped
  • 200g {frozen} cauliflower
  • 100ml milk
  • salt + pepper
  • 1/4 cube of organic vegetable bouillon
  • 150g smoked salmon
  • a pinch of dill
  • ~200g pasta {I used pici but spaghetti or fettuccine would also be great}


  1. Cook the pasta according to the instructions on the pack. Once al dente, drain and set aside.
  2. Bring a pot of water to boil and add a pinch of salt. Add the cauliflower and cook until tender. Pick out the cauliflower with a spoon {don’t drain} and transfer them directly to a blender. Add about 50-70ml of the water in which they were cooked in to the blender.
  3. In a small skillet heat up the butter and add the roughly chopped garlic. Cook until golden-brown. Add them to the blender and blend until it turns into a creamy sauce.
  4. Transfer the sauce back to a pot {you can use the one you used to cook the cauliflower} and season to taste with salt, pepper and approx. 1/4 cube of vegetable bouillon and dill. Add in the roughly chopped salmon and mix until combined.
  5. Toss the sauce into the pasta and combine so everything is nicely covered.
  6. Enjoy!
