I can’t believe Spring is finally here…well not officially but we’ve had 4 sunny days this week alone and it’s only Wednesday. Temperatures are also finally up a few degrees so I’m considering wearing lighter Spring jackets from now on. We’ll have to wait and see how the weather turns out next week but for now I’m taking every ray of sunshine in.
I wasn’t actually going to do weekly WIAW posts anymore and I probably won’t do them every single week but whenever I didn’t have a new blog post up on Wednesday I received an angry email from my sister requesting a post. Since she needs all the love she can get as she’s literally in the final stretch of her Ph.D research and basically begging for blog updates I don’t want to disappoint. Plus, I have a feeling you quite enjoy them too!
My day started out with a bowl of piping hot oats. Throughout the week I always tell myself that I’ll throw together this fantastic weekend breakfast spread with pancakes and pastries ideally enjoyed in bed but when Sunday arrives all I want is oatmeal. I hardly have them during the week so that would explain my craving.
I topped them with a spoon of almond butter {I’m definitely enjoying it a lot more ever since reading Katie’s post} and frozen blueberries which I let defrost right on top of the oats. I did laundry and other household chores like my monthly budgeting for February until it was time for my run.
My training plan had me run 10K and since the weather was absolutely beautiful without a cloud on the sky I was more than happy to spend an hour outdoors. When I got back I hopped into the shower before preparing lunch.
I know there’s a lot of debate going about whether carbs or protein are better to refuel after a run. Sometimes, especially after shorter runs I make myself a protein smoothie but on Sunday all I wanted was pasta {probably because I knew it was the best pasta out there!} I tossed the pasta in some pesto and topped it with freshly grated parmesan.
On the side I had a mixed salad with bell pepper and goat cheese on top. It was a pretty good lunch considering that it took less than 15 minutes to prepare!
In the afternoon I tested a recipe {Austrian Knödel filled with nougat and poppy seeds} that I will be making at work next week and they turned out really well. I’ll post the recipe as soon as possible but I have yet to edit the pictures. I ate the bits that I needed for photographing straight away but made sure to share the rest with my flat mates who also happen to be my taste testers!
For dinner I had fish! I was feeling creative and wanted to experiment a bit so I coated the fish in ground almonds. It gave it a wonderful, nutty flavor. On the side I had herby cauliflower.
Since I actually had a pretty early and light dinner I had a bowl of yoghurt with swiss muesli for dessert/ snack.
A pretty good day of eats

That herby cauliflower looks amazing! What do you put in it? I make cauliflower “mashed poatatos” and usually use a little milk, garlic powder, and salt/pepper.
I always wonder about the carb vs. protein for refueling too. It seems like protein doesn’t always do the trick for satisfying my hunger. What do you think?

Regarding the herby cauliflower: I accidently overcooked the cauliflower since I was chatting with my flat mates so it was already nearly mashed. I drained it, poured them back into the pot added a bit of quark (this is available in Germany only I think…it’s like cream cheese but not really. I guess full fat Greek yoghurt is a good substituation though). I basically seasoned it with s + p, a bit of dried chili flakes, herbs de provence and a bit of dried garlic. SO quite similar to yours
Refueling after workouts is somthing I think about a lot. I know that protein is needed to build up muscle but after certain exercising like running I generally opt for carbs. My favorite post-exercise fuel is actually a mixture of both: I make a smoothie with berries, milk (like almond or soy), chia seeds, a bit of water, brown rice protein, mixed frozen berries and oats. I good combination of everything my body desires!
Your food looks great! The Austrian Knödel remind me of donuts with filling
