Yesterday I celebrated my birthday with my work colleagues. It’s tradition to bring a cake into the office the month of your birthday and I couldn’t wait for my turn to finally arrive. Without exaggeration, I have been brainstorming what I could bake for weeks if not months and the feedback I got was quite satisfying. Throughout this post you’ll find a trend related to a “little” blog called What Katie Ate. I have been in awe of Katie’s photography and recipes for the longest time and she is a true inspiration. When my mom asked me what I wanted for my birthday the only thing I could think of was Katie’s cookbook…a very wise decision, if I may say so. As soon as I started flipping through the pages I could not keep myself from bookmarking one recipe after the other. But not only Katie’s cookbook is full of mouthwatering treats. Her blog is a collection of equally delicious looking recipes. I ended up baking four different things, three right from Katie’s book/ blog. They all wowed the crowd!
So here’s what I made:
The first recipe is actually one that I created myself and I am super proud that the cake turned out rich and most and that the filling stayed in place. The recipe for these cupcakes will follow soon…
This is a very popular recipe on Katie’s blog and she also included it in the cookbook. The combination of raspberry and almond is a match made in heaven and although the friands contain a tiny bit of sugar they actually feel light.
The picture below cannot portray how delicious these gooey raspberry nutella cakes are in reality. They are filled with raspberries and nutella which melt together and create a fantastic combination of flavors. Katie says that the batter is one of the best and I couldn’t agree more. However, the finished product is pretty amazing too. Best enjoyed warm!
To give you a better idea of what’s actually going on inside those mini-loafs I instagrammed it!
And here’s a picture I took at work while I was devouring yet another piece of this gooey creation in the afternoon…
Lastly, this is a recipe that is only available in Katie’s book but they sounded too good not to try. They are strawberry, apple and almond muffins lightly sprinkled with brown sugar. I’ll probably bake another batch very soon, stick them in the freezer and grab one in the mornings for an on-the-go breakfast.
I know that Katie probably doesn’t need me to promote her book but if there’s one book that you have to have right now this is it!
