WIAW: Off to Puerto Rico . . .

No joke, I’m really about to leave for the airport, on my way to Puerto Rico. It’s a bit of a long story to explain why I’m going, but in a nutshell, my sister Christina is there for a conference from December 1st until tomorrow morning and when she decided to extend her trip to enjoy a long weekend at the beach I quickly accepted her offer that I should come to. I’m only staying until Monday night but it will give us a chance to do some much needed sister-vacation, which was long overdue anyways. I’ll make sure to share some pictures with you all when I’m back. In the meantime let’s talk about last weekend.

I went home for the weekend to help my mom finish baking our Christmas cookies. We were quite successful and even managed to squeeze have friends over for dinner.

When I came home Friday afternoon my mom surprised me with a Vitamix in our kitchen. If you’ve been reading for a while now you will know that it’s one of my favorite kitchen gadgets and I’ve been desperately wanting one for quite some time. Since I raved about it after attending the FBC12 in London this fall my mom was convinced that it was worth the money {which it totally is}. To “inaugurate” the machine we had carrot-ginger soup for dinner Friday night but I still wanted to give it a go in the morning. We prepared this beautiful smoothie which included banana, grapefruit, apple, oranges and pomegranate.


In addition I prepared a bowl of fruity oats. I mixed frozen raspberries, pomegranates, oats, milk, yoghurt, chia seeds and vanilla extract and blended everything until smooth.Topped with walnut butter and pomegranates.


After breakfast I drove to see a friend and when I got back I was starving so I had a bread roll with cheese and ham.


And of course I had a cup two cups of coffee after lunch.

For dinner my mom made 3 incredible courses.

As a starter she served a green salad with tomatoes and radishes topped with spring rolls and a prawn skewer.



The entrée was my mom’s specialty. Nasi Goreng! I forgot to take a picture of this but since we had leftovers for lunch on Sunday I took a picture then.


Dessert was incredible. My mom made her famous Mousse au Chocolat and served it with fruit. I was in charge of decorating the plate! It was incredible, as always!



I’m sorry that I can’t be more chatty today but my plane leaves at 10.35am so I should really get going! I’ll talk to you when I’m in Puerto Rico!!!

    Happy WIAW! Have a great trip! I hope you post a lot of pictures. 🙂 I love bread, ham and cheese, so simple and so good. I am so happy you got a Vitamix, you will have to tell us all about it. Your mother’s dinner is beautiful. Travel safe. 🙂

    Oh my gosh, look at all this goodness. Your mom is an amazing chef and how very cool she got a vitamix. Have a great trip to Puerto Rico with your sister.

    Wow, it sounds like you’re up to a fabulous weekend! Spending time with one’s sister is great in anyway and then in such a cool place? Looking forward to your post about it.

    Aw, that little Santa is cute! I’d enjoy having a Christmas countdown like that, too. Where did you find it?

    Oh, and your food looks tasty, too. How colourful your meals are!
