I say this all the time but the creative and mouthwatering recipes food bloggers come up with is just astounding!
Saturday night I attended a surprise birthday for one of my friends and fellow interns. And of course when I think birthday, cupcakes automatically pop up in my head. It’s a good thing everyone was allowed to bring food and drinks, my peanut butter cookie dough chocolate cupcakes fit right into the selection of nibbles everyone brought.
It was hard to find the perfect item I could bring to the party. As always when I’m aimlessly looking for food to make I consulted pinterest {I’ve been hard at work updating my boards lately} and when I came across a recipe for the PB cookie dough frosting I knew this had to be made, pronto!
A little not so secret tip: when making cupcakes use an ice cream scooper to add the same amount of batter to each liner. That way they will all cook at the same time. Unfortunately I currently do not own a scooper at this point but as you can see the chocolate cake batter is perfectly scoopable, even if using a normal spoon.
For the cupcakes I adapted a chocolate cake recipe I found on MarthaStewart.com. Nothing difficult about that.
The best part about these cupcakes however is not the velvety PB frosting or the rich chocolate cake, but rather that there’s no need to artistically add the frosting using a pastry bag. I just slathered the frosted onto the cake as fast as I could! I knew I’d have no other choice than to transport them on the train in a tupperware box, so why make an effort of prettily frosting the cakes? Also, there’s nothing pretty about eating cookie dough, right!
I believe everyone liked these cupcakes, although I imagine they would have been a bigger hit if I had filled them with a Jägermeister or Schnaps filling {not that I would ever do that to perfectly delicious cupcakes}.
For some reason I feel like these are the perfect fall cupcakes. Although you can never go wrong with either chocolate or peanut butter. And when you mix the two together the result is just outstanding.
