Cake Time {Poppy Seed-Plum Torte}

It’s Sunday which in our home is cake time :) Almost every Sunday my mom bakes a cake, nothing fancy, mostly something where we can use some of the fruit from our garden. In July we had lots of apricot cake and once August rolled round and plums were in season we started using those in our desserts.

Today’s cake is one of my favorite to date. It’s really simple to make {it doesn’t even require the use of a kitchen scale} and it’s light, juicy and flavorful. Basically anything you’d be looking for in a cake, right?

My mom found the recipe for this Poppy Seed-Plum Torte in our local newspaper and was immediately smitten by the two main ingredients: yoghurt and poppy seeds. We changed a few things round and came up with a new delicious, summery version.

I promise this cake will not disappoint and it perfect if you too do not know what to do with all those plums. We used spelt flour {just because we mostly do} but all-purpose flour will also do the job. Also, you can either use full fat or reduced fat yoghurt, whichever you prefer. Here’s the recipe {the prep time is about 12 minutes, max…pinky swear}:

Poppy Seed-Plum Torte

Makes 1 26cm cake

Ingredients:

  • 2 cups of plain yoghurt (full fat or reduced fat, whichever you prefer)
  • 2 cups sugar
  • 1 tbsp. vanilla sugar
  • 2 cups + 1/4 cup spelt flour (or all-purpose flour)
  • 1.5 tsp. baking powder
  • 2 cups ground poppy seeds
  • 1 cup canola oil
  • 4 whole eggs
  • 20 plums, cut in half, stone removed
  • powdered sugar to dust the cake

Directions:

  1. Preheat the oven to 180°C.
  2. In a standmixer mix the eggs and sugar (caster and vanilla sugar). Beat until the consistency is smooth and airy. Then slowly and gradually add the oil.
  3. Next add the yoghurt, mix until fully incorporated. Then add the poppy seeds and baking powder and mix well.
  4. At the end fold in the flour.
  5. Pour half of the batter into the cake tin. Then lay out the plum halves on top and cover with the rest of the batter.
  6. Bake for 40-45 minutes or until a skewer comes out clean. Let the cake cool completely and dust with powdered sugar.

Anything that doesn’t require a kitchen scale is perfect in my book :) My family would literally die over this. Plums are like, everyone’s favourite fruit. Except me, Mine’s mango. Got a recipe for a mango cake? :)
