Hello friends. I’m in the middle of packing up my room and need a break! I’m not even halfway done yet and really can’t be bothered anymore. I’m not actually flying home until next Sunday but Fraser and Christina were kind enough to offer to drive my boxes down to my storage unit on Saturday so I wouldn’t have to pay ridiculous amounts of taxi fares. In exchange I’m inviting them to dinner as a treat 🙂
By looking at how the boxes are packed I already know that both Fraser and Christina (being a neat/ tidy-freak) will freak out when they see how I fill up boxes. I had a system for the first box, then sort of lost interest in packing and by the second box I started weirdly piling text books, notes and stationary on top of each other creating boxes that are way too heavy to carry! What fun I’ll have unpacking all of my junk!
This morning I woke up feeling a little queasy. I’m not sure what triggered this strange and quite new-to-me feeling but I just couldn’t bring myself to having breakfast right away. Very unusual. I stayed in bed a little longer but after not being able to fall back to sleep I got up and decided to go to the gym. It worked wonders! When I got back I was starving and I knew exactly what I wanted…Superfoods!
I created a Superfood Protein-Packed Breakfast Smoothie Bowl that I could slurp down while finishing an assignment for Uni. As someone doing a science degree I am aware of the fact that the term superfood is used very casually these days and people like to call their milk chocolate, which may have miniscule traces of antioxidants left after lots of processing superfoods to make them feel better about themselves and the foods they’re eating (I may have done this in the past!). But let me assure you. This smoothie actually contains superfoods in form of berries, more precisely the açaí berry.
One of my professors told me the other day that he wanted to proof all the superfood-loving people wrong by scientifically proving that the açaí berry is just another food hype. However, he found that this little berry actually does have many health benefits! Sorry that I can’t be more precise but he wouldn’t really go into any details!
So here’s the recipe:
Superfood Protein-Packed Breakfast Smoothie Bowl
makes 1 very large or 2 medium sized bowls
You will need:
- 1/3 cup oats
- 1 + 1/4 cup milk (cow, almond or soy)
- 1 cup mixed berries
- 1/2 banana
- 3 tbsp. cottage cheese
- 2 tbsp. Greek yogurt
- dash desiccated coconut
- 1-2 tbsp. chia seeds
- 3-4 tbsp. açaí berry powder
1. Mix everything in a blender, blend for 3-4 minutes until silky and smooth. Enjoy with granola or coconut on top!
Of course breakfast is only complete if served with nut butter so this breakfast smoothie was enjoyed with a sinking spoon of cashew nut butter!!! Delish!!!
