Let’s make . . . Elderflower Cordial!

…And while we are at let’s also pretend the title of my blog is not Health Inspirations. Even though elderflower cordial sounds like it’s the lightest and freshest beverage there is, it’s not! I even considered not posting about at all since it’s high in sugar and low on the nutrients. But my motto is everything in moderation. As long as you dilute the syrup properly, you’ll be fine.

Here’s the step-by-step process. It’s super easy and so worth making!

First of all you will want to collect 12 heads of elderflower. Don’t worry to much about the amount you pick. If you only have 11, no problem. The result will be the same!

Now it’s time for the sugar, lots of sugar!

Start by adding 1.5 liters of water to a big pot and turn the heat on high.  Add 2.5kg of sugar. Stir occasionally and wait for the water-sugar mixture to boil.

Let the whole thing boil for 3 minutes. Then set aside and pour the mixture into a large container. We use (clean) buckets since we usually make a lot more and not just 3 liters.

Now is the time to measure out 70g of citric acid . . .

. . . and add it to the sugar-water mixture.

Next, add those heads of elderflower. Just put them right into the solution and stir to combine.

If you see little bugs or other small animals swimming around in the solution, don’t worry! As long as you don’t pick your elderflower right next to the motorway or other busy streets it should be fine. We’re lucky enough to have it grow right in our garden.

Cover the container and let it steep in a cool, dark room  for 5-7 days!

When you’re ready to continue clean 3 1-liter glass bottles with boiling hot water!

Remove the large elderflower heads from the container. You should be left with a solution that’s yellowish, smells fruity and sweet (obviously!) and looks similar to this:

Now, let’s fill the cordial into the clean glass bottles. We My mom  uses a funnel and places a strainer on top to make sure that as little of the flowers or small animals make it into the bottle.

The whole mixture will make about 3 liters of elderflower cordial. This is also a great idea if you’re ever in need of cool and creative hostess gift. It also makes a fruity cocktail that’s perfect if you serve it mixed into champagne.

At home we drink it diluted with still water but you could also mix it into sparkling water if you prefer more fizzy drinks. See for yourself how you want to dilute the cordial, usually a 1:10 dilation makes a pretty tasty drink, although that might still be too sweet for you.
