what a pancake fail can lead to…

This morning I went into the kitchen and tried coming up with a new pancake recipe. After lots of overnight oats I was really craving chocolate pancakes. Unfortunately they totally fell apart and weren’t as fluffy as I would have liked them to be. See for yourself. A little bit of a pancake-fail!

I tried covering up my failure with lots of fruit. They were still delicious, just not what I was hoping for.

Oh well, I guess I’ll just leave the pancake recipe development to the experts :)

Luckily I have another recipe that I’ve been wanting to share with you all. It’s a good one. It involves quinoa and cheese!

I made this recipe a while back while I was still at home. My mom asked me to make something with quinoa since our pantry was overflowing. When I’m home and I go shopping with my mom I always buy lots my favorite foods (including quinoa) and I guess when I’m not around, my family just doesn’t eat that much of the good stuff. I really don’t know why. I browsed the web a bit, looking for a recipe or inspiration on a couple of blogs and was finally inspired by thisĀ  mouthwatering recipe!

Quinoa-Carrot Patties

Serving Size: makes 13 patties


  • 375g raw quinoa, cooked and cooled
  • 1 large carrot, peeled and grated
  • 1 small red onion, minced
  • about 1/3 cup fresh parsley
  • 65g breadcrumbs
  • 4 eggs
  • 1/2 cup freshly grated parmesan
  • salt, pepper and chilli powder
  • 1 cup polenta
  • olive oil or coconut oil for cooking


  1. Mix together the cooked quinoa, breadcrumbs, carrots, onion and parsley and stir well.
  2. Then add one egg at a time. Make sure to stir well so it incorporates fully.
  3. Then add the grated parmesan. Season with salt, pepper and chilli.
  4. In a large pan, heat up olive or coconut oil.
  5. Pour out 1 cup polenta onto a plate and form patties with the mixture. Coat them in polenta and transfer them into the pan. Cook 4-5 minutes per side, until golden brown.

We had our Quinoa-Carrot Patties with a dill sauce and a side salad.

So not really a pancake recipe, but close-ish!

Today, I made myself a chicken-vegetable salad for lunch. I combined chicken, bell pepper, tomato, raw broccoli and cauliflower, and Greek yoghurt and seasoned it with salt, pepper and cayenne pepper.

Sadly I ran out of bread and didn’t want to buy more since I’ll be leaving soon. But who really needs bread when you can have this for dessert?!

I needed something to cheer me up after my morning pancake-fail and this did an amazing job!

I’ve been meaning to try one of Katie’s recipe for the longest time (especially her famous chocolate pie!) and I finally got round to making an adaption of her chocolate-raspberry fudge cake today. I’m telling you, this is simple to make and beyond delicious!!! Super fudgy as well.

I know you’re going to want to make this yourself right now and in case you don’t have coconut butter I used coconut oil and it worked too.

It was the perfect way to use up the last raspberries I had in my freezer. Although right now I wish I had more since I really want to make this again. I will. Soon!

Clearly I’ve been procrastinating most of the day. I’ve also finally caught up with most TV series. I missed a couple of episodes last week of my favorite shows but I’m all up-to-date now!

Question of the day (for Gossip Girl fans)! Was anyone else really annoyed by the season finaleĀ  of Gossip Girl? This definitely hasn’t been my favorite season but the finale was a major letdown. One of my best friends and I have like discussing the episodes via skype and she messaged me on Facebook that she wasn’t happy with the finale either. I’m glad I still have the Glee season finale to look forward to :) Lea Michele’s amazing voice never lets me down!

What are your favorite TV series?

Apart from Gossip Girl and Glee and I also watch Grey’s Anatomy and Private Practice. I have a pretty busy TV watching schedule, but I make it work ;)
