After 3 weeks of rain the sun is finally out, second day in a row. I’m telling you, it’s great! The only other thing I’d like now are temperatures above 15°C. That would make me a very happy girl 🙂

Today I am back with some food inspiration. I’ve been eating lots of sandwich lunches lately since they’re prepared in no time at all. Apart from the PB&J sandwich I shared yesterday these are my new favorites.
My Caprese French Toast is an “homage” to my favorite summer dinner, Caprese. We often spend the summer days by the lake and when we come home my mom makes Caprese at least once or twice a week for dinner. Mozzarella, home-grown tomatoes, home-grown basil and olive oil/balsamic vinegar simply is a winning combination. I combined all these flavors in two slices of wholemeal toast that I dunked into egg whites. A slather of pesto, tomatoes and mozzarella is all you need. After cooking it 2-3 minutes per side in a skillet you have an amazingly rich-in-flavor lunch.
Another delicious lunch was this Avocado Sandwich with home-made guacamole.
I never buy guacamole at the store but prefer to make it myself, just the way I like it. 1 avocado, lime juice (from 1/2 lime), salt and pepper. I added some Gruyere into my sandwich and had asparagus on the side. I just can’t get enough!
What have you guys been loving lately?
Apart from eating asparagus I’ve been drinking lots of chocolate soy milk, eating bananas with almond butter and Greek yoghurt with strawberry jam. Not all at once, of course!
