Something New

My siblings and parents are some of my most avid blog readers. When I first began blogging for the first couple of weeks it felt like I was writing only to them. Even though I have a couple more readers now I still know that my family will read my blog daily. It’s a good thing, because although I don’t write about lots of personal stuff it’s nice to have people tell me what I shouldn’t write or how I could improve my blog content. (By the way, any feedback you have on any of my posts is more than welcome!)

Anyhow, a couple of weeks ago my brother messaged my via facebook saying that all of my breakfasts look the same. Now, I wouldn’t consider him an expert in the breakfast-making field (although he does make delicious scramble eggs) but for a while I tried not posting too many breakfast pics and tried out new morning eats. A couple of new dishes have been tested in the past weeks mainly smoothies and pancakes and although I still miss my bowl of oats when I don’t have them it’s always great to mix things up for your taste buds.

One of the things I’ve been liking lately are pancakes. I always wondered how people had time to prepare pancakes in the morning during the week but I found a couple of great recipes that literally only take about 5 minutes to prep. I’ve been looking through pancake recipes on other blogs and was inspired by a recipe Julie made.

Banana (Chocolate) Protein Pancakes

serves 1 (makes 4 medium sized pancakes)

You will need:

  • about 1/3 cup porridge oats
  • 1 small banana, mashed
  • 2 tbsp. cottage cheese
  • 2 egg whites
  • a couple shakes cinnamon
  • 1/2 scoop protein powder (I used Chocolate Sunwarrior powder, but any other flavor/ brand will do)
  • 1/2 tsp. flax seeds

  1. Mix everything together in a bowl. Stir to combine.
  2. Spray cooking spray into a pan and pour 1/4 of the batter into the pan. Repeat with the rest of the batter and enjoy with fruit, syrup of any other topping you like.

I really liked the texture of these pancakes and best of all the actually contain oats. If you’re interested in more pancake ideas Shannon has a couple of great recipes on her blog!

I topped my pancakes with Greek yoghurt, strawberry jam and berries and a light sprinkle of chia seeds. It was a delicious mess!

    My family read my blog also and are always pointing things out for me 🙂 Your breakfast looks fabulous! I often think that my meals all look the same. I go though phases where I will eat exactly the same thing until I become sick of it and move onto something else.

      Thanks for stopping by! I’m glad other people eat the same breakfast over and over again! But I doubt I will ever become sick of eating anything oat-related in the morning. They’re just too good!
