Frozen Raspberries.

March 13, 2012

I have only now discovered the goodies and treats hidden in the frozen food aisle at the grocery store. And by goodies I do not mean ice cream, I found that a loooong time ago ;). I found frozen raspberries and have used up a whole bag in only one week. But I just can’t get enough. I’ve been using them in practically all my meals.

It all started off by me longing for a new, spring-y topping for my morning oatmeal. Not that I don’t like my usual toppings anymore, but with all the “spring talk” that’s been going on on Twitter and Facebook and the “warm” weather we’ve been having, my body just wanted something colorful in the mornings. And so, I decided to make raspberry oatmeal. Of course, fresh raspberries aren’t available in the UK right now, since it’s March and it’s the UK so I picked up a bag of frozen raspberries. The next morning while I was preparing my usual oatmeal, I decided to throw in a couple of raspberries towards the end for an extra pop of color. And to top things off, I prepared a simple raspberry sauce by mixing 1/2 cup of frozen raspberries (microwaved for 30 seconds), a tiny splash of almond milk and about 1 tsp. of honey and the result was great.

It even looks good all mixed up, doesn’t it?

And so one recipe lead to the other…

My second recipe was a raspberry smoothie which I had before a morning workout. I included some chocolate protein for some extra energy (which I certainly need during the bootcamp) and it turned out a beautiful pink creation.

And on Sunday I decided to take my raspberry love to the next level by topping my quinoa pancakes with a similar raspberry sauce that I had with my oatmeal. But instead of the honey, I used maple syrup…perfect for pancakes. It was delicious.

Now I really can’t wait for the summer to finally come so I can pick fresh raspberries from our garden and create more recipes!

What are you guys loving right now?

I eat frozen raspberries all the time for breakfast! I mix them with plain yogurt, let it sit for 5-10 minutes, and come back to a delicious bowl of sugar-free frozen yogurt. So good!

That is such a great idea, never thought of that before. Frozen yoghurt is still so hard to find in Austria (luckily not so in the UK) and I love it. I know what I’ll be having for breakfast tomorrow 😉
