When I did my food shopping after I got back to England after Christmas I accidentally ordered 2 bags of brown rice instead of 2 bags of quinoa. So now I am left with about 750g of brown rice (I’ve had a little bit of it already) and only 50g a.k.a an almost empty bag of quinoa. This makes me sad because there’s something about quinoa that I just love and I’m angry because they don’t sell it at my usual grocery store! So all I am left with is brown rice!
Yet, at some point I will have to start digging in to my brown rice reserves and I thought now is a good time. I have to say, I love rice (especially Nasi Goreng and Risotto…recipe coming up soon!) but just don’t find it that appealing that I want to have it every day. However when adding a couple of crunchy, fresh veggies and mixing it all together with chilli I just can’t get enough!
This really isn’t anything else than a simpler version fried rice. All you do is fry 1-2 crushed garlic cloves in some coconut oil, then add the vegetables (red pepper, carrots, snap peas and anything else you desire) and let it cook for a couple of minutes. Then add the rice. When everything is mixed together add s+p and 1 tbsp. of chili sauce and a little bit of fresh chili and you’ve got yourself a spice bowl of vegetable rice!
