Brown Rice just ain’t Quinoa

When I did my food shopping after I got back to England after Christmas I accidentally ordered 2 bags of brown rice instead of 2 bags of quinoa. So now I am left with about 750g of brown rice (I’ve had a little bit of it already) and only 50g a.k.a an almost empty bag of quinoa. This makes me sad because there’s something about quinoa that I just love and I’m angry because they don’t sell it at my usual grocery store! So all I am left with is brown rice!

Yet, at some point I will have to start digging in to my brown rice reserves and I thought now is a good time. I have to say, I love rice (especially Nasi Goreng and Risotto…recipe coming up soon!) but just don’t find it that appealing that I want to have it every day. However when adding a couple of crunchy, fresh veggies and mixing it all together with chilli I just can’t get enough!

This really isn’t anything else than a simpler version fried rice. All you do is fry 1-2 crushed garlic cloves in some coconut oil, then add the vegetables (red pepper, carrots, snap peas and anything else you desire) and let it cook for a couple of minutes. Then add the rice. When everything is mixed together add s+p and 1 tbsp. of chili sauce and a little bit of fresh chili and you’ve got yourself a spice bowl of vegetable rice!

And because I still have lots and lots of rice left and need some inspiration I want to know:

    I actually love quinoa more than brown rice too. I just don’t like the chewiness of brown rice but it still tastes good. My favorite rice dish is curry chicken with jasmine rice that my mom makes. So good!

    Yummy! I’m glad you mentioned curry. Should definitely make that at some point since it’s a favorite in the British cuisine!

    So much brown rice!! You could partially grind it and cook it up like oats on the stove for breakfast. Tha’d be a new take on it!

      That’s a great idea. Thank you! I have oatmeal pretty much every morning anyways so I might really give that a try.
