Today I wanted to share this week’s favorite blog recipe with you. Whenever I read my favorite blogs I make a list of recipes I want to try or meals that inspire me to cook something similar. As you can imagine the list is endless and I hardly get round to making even a small part of the foods that I would want to as I am mostly occupied with a thing called “University”. But I usually make at least one food blog recipe per week.
As I am still a little sick and felt the need to load up on some extra veggies and vitamins I searched my way through my favorite blogs and tried finding a recipe that would make me feel better and more energized. And I think I found one.
Kristin’s recipe for Superfood Salad with Lemon Vinaigrette not only sounds like it will heal any illness immediately it also tastes incredibly healthy and bursts with with all kinds of flavors.
I love how this recipe incorporates both fruit (orange, pomegranate arils) and vegetables (avocado, corn, etc.). It also calls for my favorite grain: quinoa! I was so excited to prepare this salad as it’s exactly what my body needed to feel better. I’m still not 100% fit, but eating plenty of vitamin packed foods surely makes me feel more energized and alert!
I followed the recipe without making any big changes cause it sounded just perfect. Instead of black beans I used kidney beans and I left out the cilantro and only used a couple of leaves for garnish.
