Salmon Packed Up

One of my favorite kinds of fish is salmon and I try to have it weekly. I love the taste and am constantly trying to come up with new ways of preparing it. The other day, when I didn’t have that much time to cook, I decided to make salmon packed up in aluminum foil by simply wrapping up the filets in foil together with lime, lemon and fresh herbs. You can always adjust the amounts of lime and lemon and the types of herbs used to your personal taste and it’s exactly what makes the fish taste exciting and different every time you make it. I also added some chilli!

I personally love having lemon with salmon. The two flavors just compliment each other perfectly. But if your not a big fan of the sourness, you can always add garlic and play around with the amounts of herbs added. All you need other than that are a tablespoon or two of olive oil and you’re good to go.

I let the salmon bake in the oven for approximately 20 minutes at 175°C and it was perfectly cooked after that. Together with the herbs, the lemon-lime sauce tasted amazing on top of some brown rice.

Be extremely careful when “unpacking” the salmon, as it is incredibly hot and steamy. Don’t burn yourself!

    I love your blog – keep up the good work! This looks great – I was wondering where you buy your salmon in Vienna? My family has had a hard time finding good fish here.

      Thanks Nicolle! I don’t actually live in Austria for most of the time since I study in England and when I’m back at home we love eating fish that’s straight from the Attersee (if you know that lake). We live quite close by and it’s great to have fresh, good quality fish to eat. We also have a great store, which focuses on organic meats and fish close to the school where my mom teaches and that’s where we buy our salmon most of the time. I know this didn’t really answer your question, but hope it helps a little. No I’m off to check out your blog!
