So far, this term has been a busy one and it’s probably going to continue to be like this until March! This means that I’ll be spending more time on Campus and won’t always get to eat lunch at home. Personally, I don’t have a problem with that because bringing a packed lunch to Uni reminds me of those days at school where my mom would pack up a delicious lunch. Plus, bringing a lunchbox to Uni is just like having a picnic every single day! Well, sort of!
For the last two weeks I’ve been taking pictures of some of my lunches in case I decided to share them with you. I feel that eating a healthy and nutritious lunch should not only be a priority for school children but for adults (or students at Uni/ college) as well. Eating smaller, healthy snacks and bringing a large bottle of water is the key to optimal performance for me! Therefore from now on I’ll start sharing lunch box ideas that I feel are noteworthy and inspirational for others.
So far I’ve been trying to come up with as many different lunch variations to bring to Uni to not get bored. I usually cut the vegetables the night before to save precious time in the mornings. My flat mate does the same thing so we’ve been having some fun late night vegetable chopping sessions lately!
The pictures I’ve taken so far aren’t the best quality because I literally just grabbed my camera to take a quick picture on the way out. I’ll put more effort into it in the future. I promise!
A couple of ideas so far:
- fresh salads
- fruits and berries
- vegetables and wholemeal bread and hummus
- healthy crackers
- leftovers (I brought along my vegetable pasta salad)
And another useful tip: invest in a good lunch box that won’t leak. Trust me on this one!
