I found the recipe for the Courgette Fritters in the Autumn Issue of the BBC GoodFood Quick Suppers magazine. For 2 servings they calculated 2 medium zucchini, 2 tbsp. self-raising flour, 25g of Parmesan and 1 tbsp. of olive oil.
I modified the recipe a little:
- 2 med. zucchini
- 2 tbsp. flour
- 30g Goat cheese
- coconut oil
- seasoning: salt, pepper
- Grate the zucchini. Combine with flour and Goat cheese.
- In a frying pan, heat the oil. Form 5-6 burgers. Fry for 3min on each side.
I had my burgers with a side salad, but they would taste amazing with a wholewheat burger bun or ciabatta and your choice of vegetables.
