Time to get creative

One of the problems you have when you live alone and have to cook for one person is the amount of leftovers that you have (not that I mind) or the fact that using up certain foods will take a couple of days. One example: butternut squash. I didn’t buy a particularly huge one, however it is safe to say that I will  be having butternut squash tomorrow also (again, I don’t mind!). So check back tomorrow for a new recipe!

Lunch today was a simple salad (spinach and kale) with roasted butternut squash and roasted sweet potato with mushrooms and tomato. On the side: one fried egg. I love having salads for lunch when I don’t have a lot of time to prepare a fancy meal.  Plus I like styling them up so they get as colorful as possible.

    Hi Kim. Thanks for stopping by. You should really try the butternut squash-salad combo. It adds the perfect amount of sweetness.
